National Margarita Day February 22nd!

Here's our signature margarita, one we sell more of than any other drink at the Steakhouse. Multiply the recipe by the number of friends you have; you can make up to two at a time in a cocktail shaker. We use a well-priced, but high quality, 100 percent blue agave reposado tequila that has been aged or rested for a couple of months in oak barrels. Just that slight amount of aging rounds and softens the tequila's bite, making it perfect for mixing into cocktails. We use a pair of orange liqueurs and fresh lime juice, never a pre-fab mix for this (or any of our cocktails), making it the ultimate margarita. ¡Salud!

Ingredients:
Kosher salt
Lime wedge
1 1/2 ounces El Jimador Reposado tequila
1 ounce Housemade Sweet-and-Sour Mix (recipe below)
1/2 ounce Grand Marnier orange liqueur
1/2 ounce Triple Sec orange liqueur
1/2 ounce fresh lime juice
Lime slice

How to Make:
Place a thin layer of salt, about 1 tablespoon, on a saucer. Rub the rim of an Old Fashioned glass with the lime wedge and dip the rim into the salt. (Omit if you prefer your margarita sin sal, without salt.) Half-fill the glass with cracked ice. Pour the tequila, sweet-and-sour mix, Grand Marnier, Triple Sec, and lime juice into a cocktail shaker. Cover and shake well to combine. Pour over the ice in the glass. Garnish with the lime slice and serve.


Housemade Sweet-and-Sour

This will make more than you need for 1 or 2 margaritas, but refrigerated, it keeps well for at least a week.

Ingredients:
1/2 cup sugar
1/2 cup fresh lime juice
1/2 cup fresh lemon juice

How to make:
In a small saucepan, bring 1/2 cup water to a quick boil. Stir in the sugar and continue stirring until the water is clear. Remove from the heat and stir in the lime and lemon juices. Cover and refrigerate until needed.
